Will a 6Y5-2818R-41 fuel management gauge work with dual 2003 HPDI 150 hp motors? Can it read the fuel from both motors? thanks

It reads whatever fuel line it's sender is installed in. You need two senders, one for each fuel line to each motor. Attach one sender to the outlet side of each of your Racor filters. The harness has two plugs at the motor end, one for each sender. If it was a single engine installation you would only install one sender and end up with a spare plug.
