Which would give me more thrust or speed- higher number or lower number on pitch?

The higher the pitch, in theory, the farther the prop will move in the water per revolution. This takes more power to do but typically will result in a higher top end speed. The lower the pitch, the easier it is for the motor to turn the prop because it is not pushing as much water. If you have a heavy load, a lower pitched prop will allow the motor to turn higher RPM thus giving you more power. It really depends on what kind of boat you have and what you are trying to. Sometimes you have to try several to find the right prop for your boat or you may even end up needing two. One for performance, one for heavy loads or skiing.
