Need help yamaha 80hp

I took head cover off to look at water chanels they are brown not wight salt will this brown on the water chanels make it get hot sometimes not all thetime i have a new waterpump i snaped off two bolts i dont wont to take off head to look and snap off a bolt what is the best way to get out the studs this is a 1997 80hp c80

The water jackets should not have any debris in them that would restrict water flow. Might take it a dealer or welding shop to see if they can get broke bolts out without drilling it out.
